SPICY CUCUMBER RELISH
Ingredients
- 1 cup white vinegar
- 1 cup brown or white sugar
- 1 teaspoon salt
- 1 large cucumber
- 4-6 small Thai chilies or 2-3 serrano chilies
- ½ peanuts, finely chopped
- 1/3 cup cilantro, chopped including stems
Technique
- Combine vinegar, sugar and salt in a small saucepan over medium heat.
- Bring the mixture to a boil, stirring occasionally.
- Remove from the heat and cool to room temp.
- When ready to serve, peel the cucumber, cut in half and seed.
- Cut the halves into thin slices.
- Combine all ingredients in a bowl and mix gently.
- Note: You can make the dressing mixture in advance, but add the cucumber and peanuts just before service so they stay crisp.
