SPICY CUCUMBER RELISH

Ingredients

  • 1 cup white vinegar
  • 1 cup brown or white sugar
  • 1 teaspoon salt
  • 1 large cucumber
  • 4-6 small Thai chilies or 2-3 serrano chilies
  • ½ peanuts, finely chopped
  • 1/3 cup cilantro, chopped including stems


Technique

  • Combine vinegar, sugar and salt in a small saucepan over medium heat.
  • Bring the mixture to a boil, stirring occasionally.
  • Remove from the heat and cool to room temp.
  • When ready to serve, peel the cucumber, cut in half and seed.
  • Cut the halves into thin slices.
  • Combine all ingredients in a bowl and mix gently.
  • Note: You can make the dressing mixture in advance, but add the cucumber and peanuts just before service so they stay crisp.
