SESAME RICE DESSERT CAKES

Ingredients

  • 1 ½ cups Jasmin rice
  • 3 cups water
  • 1 ½ cups unsweetened cocoanut milk
  • 1 ½ cups sugar
  • ¼ cup sesame seeds


Technique

  • Combine rice and water in a pot and boil for about 8 minutes.
  • Add cocoanut milk and sugar and cook for about 10 minutes.
  • You will need to stir frequently to avoid burning the rice.
  • Mixture should be sticky and al dente.
  • Turn out onto shallow pan and sprinkle with sesame seeds.
  • Refridgerate until cold and cut (make sure knife is wet or it will be hard too sticky to cut)
  • Serves 12
