GRILLED CHICKEN SATAY WITH CURRIED PEANUT SAUCE
Ingredients - Marinade
- 1 cup unsweetened cocoanut milk
- 4 T Yellow curry paste
- 2 Tablespoons dark brown sugar
- 2 Tablespoons Fish sauce (nam pla)
- 1 Tablespoon ground coriander
Ingredients - Satay
- 1 lb boneless chicken breast
- 18 long bamboo skewers (soaked in water for 15minutes)
- Curried peanut satay sauce
- Spicy cucumber relish
Technique
- Combine the marinade ingredients and mix well.
- Slice chicken breasts thinly to make strips. Add chicken to marinade and stir to coat all the pieces.
- Cover and refridgerate for 3-24 hours.
- Turn on broiler and thread the marinaded chicken onto bamboo skewers.
- Broil the strips of satay until done.
- Transfer to serving platter with sauces when done
