GRILLED CHICKEN SATAY WITH CURRIED PEANUT SAUCE

Ingredients - Marinade

  • 1 cup unsweetened cocoanut milk
  • 4 T Yellow curry paste
  • 2 Tablespoons dark brown sugar
  • 2 Tablespoons Fish sauce (nam pla)
  • 1 Tablespoon ground coriander


Ingredients - Satay

  • 1 lb boneless chicken breast
  • 18 long bamboo skewers (soaked in water for 15minutes)
  • Curried peanut satay sauce
  • Spicy cucumber relish


Technique

  • Combine the marinade ingredients and mix well.
  • Slice chicken breasts thinly to make strips. Add chicken to marinade and stir to coat all the pieces.
  • Cover and refridgerate for 3-24 hours.
  • Turn on broiler and thread the marinaded chicken onto bamboo skewers.
  • Broil the strips of satay until done.
  • Transfer to serving platter with sauces when done
