WARM SPINACH SALAD WITH PARMESAN TOAST

Eating your spinach (and radicchio) has never been more pleasant.

Servings

  • Serves two to four


Ingredients

  • 12 ounces fresh baby spinach
  • 1/2 - 1 whole head radicchio, thinly sliced
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 onion minced
  • 1/2 cup pine nuts
  • Toasted Parmesan Toast


Technique

Salad:

  • Combine spinach and radicchio in large bowl
  • Bring oil, vinegar, and onion to simmer in large saucepan
  • Season with salt and pepper
  • Immediately pour dressing over salad
  • Toss salad to coat
  • Divide among plates
  • Sprinkle with nuts and serve with warm toast.

Parmesan Toast:

  • Cut bread into rounds and brush with olive oil
  • Top with parmesan cheese
  • Bake in 350 degree oven til golden

Toasting Nuts:

  • In a saute pan heat up nuts til light gold in color
  • Constantly move nuts around in pan to avoid burning
