WARM SPINACH SALAD WITH PARMESAN TOAST
Eating your spinach (and radicchio) has never been more pleasant.
Servings
Ingredients
- 12 ounces fresh baby spinach
- 1/2 - 1 whole head radicchio, thinly sliced
- 1/3 cup extra-virgin olive oil
- 1/4 cup balsamic vinegar
- 1/2 onion minced
- 1/2 cup pine nuts
- Toasted Parmesan Toast
Technique
Salad:
- Combine spinach and radicchio in large bowl
- Bring oil, vinegar, and onion to simmer in large saucepan
- Season with salt and pepper
- Immediately pour dressing over salad
- Toss salad to coat
- Divide among plates
- Sprinkle with nuts and serve with warm toast.
Parmesan Toast:
- Cut bread into rounds and brush with olive oil
- Top with parmesan cheese
- Bake in 350 degree oven til golden
Toasting Nuts:
- In a saute pan heat up nuts til light gold in color
- Constantly move nuts around in pan to avoid burning
