CHOCOLATE MOUSSE

Servings

  • Serves 6-8


Ingredients

  • 3 cups chilled half and half
  • 1 pkg Instant vanilla pudding
  • 1 cup semi sweet chocolate chips or chunks
  • 1 pt whipping cream
  • Lady fingers or pound cake
  • Grand Marnier, Cointreau, Cassis would be a great idea for the pound cake


Special Equipment

  • An instant-read thermometer


Technique

  • Follow directions on package of pudding. Let set in Fridge for 5-10 minutes.
  • Melt chocolate in a double boiler or a metal bowl set over a pan of simmering water, stirring frequently
  • Whip whipping cream till stiff stage
  • Fold chocolate into pudding until smooth, then fold in half of the whipped, whipping cream
  • To prepare glasses/ramekins slice pound cake very thinly and line glass
  • Drizzle chocolate sauce or liqueur over and spoon mousse into glasses or ramekins and chill, covered, at least 6 hours
  • Let stand at room temperature about 20 minutes before serving
  • Garnish with lightly sweetened whipped cream
