SAUTÉED CHICKEN WITH LEMON & BASIL

Ingredients
- 1 boneless chicken breast
- ½ lemon
- 4 leaves basil
- ½ cup flour
- Salt
- Pepper
- 2 Tablespoons Olive oil
- ½ cup Chicken stock
Technique
- Mix flour, salt and pepper in a bowl and set aside
- Take off only yellow part (zest) of lemon peel and julienne. Put julienne into bowl with juice from the lemon and set aside
- Take chicken breast, cut in half lengthwise and set aside
- Chiffonade the basil and set aside
- Heat the sauté pan and add olive oil. Dredge the chicken in the flour mixture and put into sauté pan
- When done, take chicken out and put on plate
- Add chicken stock to pan to deglaze. Add lemon and basil and reduce to ¼ cup
- Pour sauce over chicken and serve
