
THREE CHEESE RAVIOLLI
Use Pasta Dough recipe and rollout. Then cut dough into equal size squares.
Ingredients - Raviolli Filling
- 2 tablespoons olive oil
- 3 large shallots, minced
- 6 ounces soft fresh goat cheese (such as Montrachet), crumbled
- 1/2 cup (about 1 1/2 ounces) freshly grated Parmesan cheese
- 1/2 cup Riccotta cheese
- Salt & Pepper to taste
Technique:
- Heat oil in heavy large skillet over medium heat.
- Add shallots and sauté 10 minutes.
- Transfer to a bowl and cool slightly.
- Mix in goat cheese and Parmesan cheese.
- Season filling with salt and pepper.
- Fill the pasta squares with filling and boil for 3 minutes.
