THREE CHEESE RAVIOLLI

Use Pasta Dough recipe and rollout. Then cut dough into equal size squares.


Ingredients - Raviolli Filling

  • 2 tablespoons olive oil
  • 3 large shallots, minced
  • 6 ounces soft fresh goat cheese (such as Montrachet), crumbled
  • 1/2 cup (about 1 1/2 ounces) freshly grated Parmesan cheese
  • 1/2 cup Riccotta cheese
  • Salt & Pepper to taste


Technique:

  • Heat oil in heavy large skillet over medium heat.
  • Add shallots and sauté 10 minutes.
  • Transfer to a bowl and cool slightly.
  • Mix in goat cheese and Parmesan cheese.
  • Season filling with salt and pepper.
  • Fill the pasta squares with filling and boil for 3 minutes.
